SIMMENTAL

Origin: Switzerland
Size: Medium / Large
Coat Colour: Brown and white

Simmental beef is another benchmark in the world of steakhouses. Leaner and firmer in texture, it offers an intense, clean flavour. The name Simmental comes from the Simme Valley in Switzerland. This dual-purpose breed is raised for both milk and beef production, making it particularly popular across Central Europe. In Germany and Austria, it is known as Fleckvieh, meaning "spotted cattle".

What Makes Simmental Beef Unique?

Colour: Deep red. The external fat may take on a yellowish hue if the animal has been fed on grass.

Marbling: Moderate. This is a leaner beef, with fat concentrated more on the outside than within the muscle.

Ageing: 45–60 days or longer, enhancing tenderness.

Flavour: Meaty, clean and intense, with pronounced red meat and iron notes. It offers an excellent balance between buttery richness and fat.

Its finest cuts include ribeye, striploin and tenderloin.
